Not many vegetable dishes are as flavorful and simple as the famous ratatouille. What I love about it is that it’s made of a handful of humble ingredients, it is very easy to cook, and the final dish is not only pretty but very delicious as well.

INGREDIENTS
For the sauce:
- 2 onions
- 2 carrots
- 300g. white mushrooms
- 1 can of tomatoes
- 2 red bell peppers
- 1 clove of garlic
- 1 tsp. dry basil
- 1 tsp. red smoked paprika
- 1 stock cube
- ~2 tbsp. vegetable oil
- 1 cup of water
For the topping:
- 2 small zucchini
- 1 medium eggplant
- 3 medium tomatoes
- ~ 2 tbsp. vegetable oil
- Salt and pepper to taste
INSTRUCTIONS
- Start by sautéing the onions and the carrots in the vegetable oil.
- One by one add the remaining ingredients, stirring and giving a few minutes after each addition to blend the ingredient into the mixture.
- Add the water, the tomatoes and the seasoning last and let it simmer on low heat for about 15 minutes.
- Once the sauce is cooked, blend it with blender until the sauce reaches the consistency you prefer.
- Than transfer the sauce in a baking tin or a casserole dish.
- Slice the tomatoes, the zucchinis and the eggplant in about 4mm. slices.
- Assembly the slices on top of the sauce alternating between the different vegetables.
- Sprinkle vegetable oil, salt, pepper and dry basil on top, cover with aluminium foil and bake in a preheated over on 180 C, for about 45-50 minutes.
